Dr. Dorothy Duncan, acclaimed historian and author, finds the past an interesting place to examine the idea of eating local in her lecture “From Forests to Farmsteads to Fields to a Neighbourhood Garden: Our Ancestors’ One Mile Diet.” Her books “Nothing More Comforting: Canada's Heritage Food" and "Canadians at Table: Food, Fellowship and Folklore" will also be available for sale and signing.  Refreshments served.

The Settler’s Kitchen

A Trio of Cooking Classes Inspired by Settlers to Prince Edward County
September 26, 27 and 28th, 2010
Join the Waring House Cookery School as we explore the foods and techniques brought to Prince Edward County by early settlers. Our chefs will be leading these hands-on cooking classes, which will culminate in a large lunch.  Local history experts and local members of the Slow Food Movement will be on-hand to share their knowledge. You’ll leave with a full mind and a full belly!

Jams, Pickles and other Food Preserving Techniques

We’ll start this class off by putting some local meat in our smoker at the Waring House Cookery School and discussing home smoking and other methods of preserving food, including pickling and dehydrating. We will be making anumber of savoury and sweet pickles and jams using fresh locally-sourced produce. We will talk about PEC’s historic canning industry and take a look at some old labels and other items. Lunch will consist of fresh bread, smoked meat, as well as various pickled, canned and dehydrated foods.  After lunch, you'll take away some great preserving knowledge, wonderful recipes and preserves! 10am-3pm

Pinot Noir Wine Making Workshop at Rosehall Run

As Harvest approaches and our precious crop of 2010 Pinot Noir matures, many visitors ask our staff one simple question:

“How do we decide when to pick the grapes?” 

At Sunday’s workshop, winemaker and vineyard manager Dan Sullivan, will answer this and many other questions surrounding the Harvest.  You’ll learn about Brix berry sampling and how to interpret refractometer readings. From cleaning bins to prepping barrels, you’ll discover how we prepare for the big day.  And, best of all, you’ll sample the pinot noir grapes that will become our 2010 Estate Vintage.  Workshop includes complimentary tastings of our newly released 2008 Pinot Noirs, and an exclusive preview barrel sample of our 2009 Pinot Noir paired with appetizers specially prepared by Dan himself.
